Sodium Tripolyphosphate
Sodium Tripolyphosphate (STPP for short) is an important inorganic polyphosphate with the chemical formula Na₅P₃O₁₀. It appears as a white crystalline powder or granule, odorless, with a density of approximately 2.52 g/cm³ and a melting point of 622℃. It is easily soluble in water, with a solubility of about 14.5g/100g water at 25℃, and its aqueous solution is weakly alkaline (pH 9.2-10.0). Crystalline forms: It is divided into Type I (high-temperature type) and Type II (low-temperature type), with Type I having higher hygroscopicity and thermal stability.

Main Application Fields
Water-retaining Agent and Tenderizer:
Used in meat products (such as ham, sausages) and seafood (such as surimi, shrimp slides). By chelating metal ions and enhancing protein hydration, it reduces moisture loss and improves tenderness and juiciness. Studies have shown that the moisture loss rate of meat products added with STPP can be reduced by 30%.
pH Regulator and Stabilizer: Adjusts the pH value in dairy products (such as cheese, yogurt) and beverages, stabilizes the protein structure, and prevents precipitation or stratification.
Emulsifier and Dispersant: Helps oils and fats disperse evenly in the food system. For example, it is used in dough improvement of baked goods to enhance water retention and softness.
Softener: When soaking vegetables (such as canned broad beans), it chelates calcium in the peel, reduces the hardness of the epidermis, and improves processing efficiency.
Water Softening and Decontamination Enhancement: Chelates calcium and magnesium ions in hard water, eliminates their interference with the active ingredients of detergents, and improves decontamination effect. For example, adding 10-50% STPP to washing powder can significantly enhance the ability to remove oil and mineral stains.
Dispersion and Anti-redeposition: Disperses dirt particles and prevents them from reattaching to the surface of fabrics or tableware, which is especially suitable for cleaning needs in hard water areas.
Industrial Cleaning Agent: Used for descaling and degreasing metal equipment and pipelines, such as high-temperature cleaning of food processing equipment.
Water Treatment and Scale Inhibition: Serves as a scale inhibitor in boiler water and circulating cooling water systems to prevent the deposition of calcium and magnesium salts and extend the service life of equipment. In oilfield water injection, it can inhibit formation mineral clogging of wellheads.
Ceramic and Metal Processing: As a slurry dispersant, it improves the fluidity and uniformity of ceramic raw materials; in the pre-treatment of metal electroplating, it removes the surface oxide layer and enhances coating adhesion.
Papermaking and Textile Industry: Used for pulp bleaching and filler dispersion to improve paper whiteness and strength; in textile printing and dyeing, it acts as a dyeing auxiliary to enhance dye uniformity and color fastness.
