Processing Aids: Serves as an acidity regulator and stabilizer to improve food texture (e.g., in dairy products and baked goods).

Compared with traditional stabilizers, it is more easily accepted by consumers due to its "natural origin" attribute.
Quality Improver: In baked goods (e.g., cakes, cookies), a small amount of addition (0.1%-0.3%) can improve the ductility of dough and make the finished products softer in texture; in meat products (e.g., sausages), it can adjust the pH of minced meat, enhance water retention, and reduce cooking loss.
Medical and Health Field
Intestinal Cleansing: As an osmotic laxative, it softens stool by absorbing intestinal water and is often used for bowel preparation before colonoscopy.
Supplementation for Magnesium Deficiency: Its absorption rate is approximately 30%-50%, significantly higher than that of magnesium oxide (4%-10%). It is suitable for improving magnesium deficiency caused by insufficient dietary intake or specific diseases (e.g., diabetes mellitus, cardiovascular diseases).
