Sodium Acid Pyrophosphate
Sodium acid pyrophosphate (SAPP) is an important inorganic pyrophosphate with the chemical formula Na₂H₂P₂O₇. It appears as a white crystalline powder or granules, is odorless, slightly salty, and relatively safe for humans. It is easily soluble in water, and its aqueous solution is weakly acidic (pH approximately 4.0–4.5), a property that makes it suitable for regulating the acidity of food. It is stable in a dry state at room temperature, but gradually hydrolyzes when exposed to water or moisture; at high temperatures, it decomposes, so it should not be stored for long periods in high-temperature environments.

Main Application Fields
This is the primary use of SAPP, with functions centered on "improving food quality" and "aiding processing".
Quality Improver: Used in meat products (such as sausages, ham, bacon) and aquatic products (such as fish balls, shrimp slides). By chelating metal ions and improving protein structure, it enhances the water-holding capacity, tenderness and elasticity of food, and reduces moisture loss during processing.
Leavening Agent: Combined with sodium bicarbonate, it acts as a compound leavening agent for baked goods (such as bread, cakes, biscuits). The released carbon dioxide forms a porous structure inside the food, resulting in a softer taste.
Moisture Retention Agent: Added to frozen foods (such as frozen dumplings, meat balls), it can prevent deteriorated taste and hardened texture caused by moisture loss after thawing.
Acidity Regulator: Used in small amounts in foods such as beverages and jams to assist in adjusting the pH value of products and stabilizing their flavor and color.
Its applications are relatively limited, mainly utilizing its chemical activity.
Industrial Water Treatment: As a water softener, it prevents scale formation by chelating calcium and magnesium ions in water, thus protecting pipelines and equipment.
Toothpaste Additive: Added to some toothpastes, it can act as a tooth desensitizer or anti-tartar ingredient, helping to reduce plaque and tartar accumulation.
Metal Surface Treatment: Used for pre-treatment before metal electroplating to remove the surface oxide layer and improve the adhesion of the coating.
