
Sodium bicarbonate (chemical formula: NaHCO₃), commonly known as baking soda, is a common sodium salt, widely used in the food, industrial, and pharmaceutical fields.
Applications in the food industry
It is primarily based on its property of decomposing to release carbon dioxide when heated and its role in weakly alkaline regulation. In the production of biscuits, bread, and other foods, it decomposes upon heating to generate carbon dioxide gas, which forms air pockets inside the food, making the texture loose, soft, or crispy. In carbonated drinks and fruit juice beverages, it can neutralize excessive sourness to balance the taste; meanwhile, it inhibits microbial growth and extends the shelf life.
Fruit and vegetable processing
When soaking fruits and vegetables (such as green beans and asparagus), the weakly alkaline environment can protect chlorophyll, reduce oxidative discoloration, and maintain a bright green color.
Jams and jellies
It adjusts the pH value, helps stabilize the gel structure, and prevents loose texture caused by excessive acidity.
In the processing of sausages, meatballs, ham, etc., sodium bicarbonate can break down part of the protein structure in meat, making proteins more prone to absorbing water and swelling, enhancing the water-holding capacity and tenderness of meat products, reducing moisture loss during cooking, and keeping the meat more juicy.
Applications in the industrial field
It can be used in the production of acid-base fire extinguishers and foam fire extinguishers. In the rubber industry, it is applicable to the production of rubber and sponges. In the metallurgical industry, it can serve as a flux for casting steel ingots. In the machinery industry, it functions as a molding aid for cast steel (sand casting) sand molds. In the printing and dyeing industry, it is used as a color fixative for dyeing and printing, an acid-base buffer, and a post-treatment agent for fabric dyeing and finishing; adding it during dyeing can prevent color streaks on yarn bobbins, and it can also be used as a detergent for wool.
Applications in the medical field
Sodium bicarbonate can be used as a raw material in pharmaceutical manufacturing. It is used to treat hyperacidity and metabolic acidosis, and can also alkalinize urine to prevent uric acid kidney stones. Additionally, it can reduce the nephrotoxicity of sulfonamide drugs and prevent hemoglobin deposition in renal tubules during acute hemolysis, as well as treat symptoms caused by hyperacidity. Intravenous infusion of it has a non-specific therapeutic effect on poisoning caused by barbiturates, salicylates, methanol, and other drugs.
