Sodium carbonate
Sodium carbonate is a white hygroscopic powder that is easily soluble in water, and its aqueous solution is strongly alkaline. As an important inorganic chemical raw material, it is widely used in the fields of food, chemical industry, metallurgy, textiles, and glass.
In the food field
In the processing of flour products, during the dough fermentation process, yeast produces acidic substances such as lactic acid. Adding a small amount of soda ash (usually compounded with baking soda) can neutralize the sour taste and prevent the pasta from becoming sour. At the same time, soda ash reacts with acid to release CO₂, which helps the dough expand, making the finished product softer and fluffier.
In meat product processing for tenderizing and water retention
In the processing of meats with coarser muscle tissues such as beef and pork, soda ash can destroy the structure of proteins (such as actin and myosin) in muscle fibers, softening the meat. It also increases the pH value of the meat, enhances the water-holding capacity of proteins, and reduces water loss during heating.
Color protection and softening of fruits and vegetables
When processing preserved fruits and candied fruits, soaking fruits and vegetables in a low-concentration solution (0.5%-1%) can destroy the cell walls of the epidermis, promote the penetration of sugar, and inhibit the activity of polyphenol oxidase to prevent browning (such as preserved green plums and hawthorns).
Seasoning of prefabricated meat products
In cured meat and preserved meat, it neutralizes the sour taste produced by meat fermentation, balances the flavor, and at the same time inhibits the growth of spoilage bacteria, extending the shelf life.
Auxiliary in can sterilization
In vegetable cans (such as mushroom and bamboo shoot cans), it can adjust the pH to weakly alkaline, reduce the sterilization temperature (or shorten the time), reduce nutrient loss, and maintain the crisp taste of vegetables.

Functional Value-Added Aspects in Multiple Industries
Sodium carbonate plays a crucial role in improving quality and efficiency across various industries, not only as a raw material but also in several key aspects:
Food Industry
As an acidity regulator, leavening agent, and processing aid, it is used in noodles, bread, steamed buns, and other wheat-based products. It enhances the elasticity and extensibility of the gluten network, resulting in chewier noodles with a better texture. In cocoa processing, it is used for alkalization, improving color and flavor. Patented research also shows that adding an appropriate amount of sodium carbonate to instant fried noodles can effectively reduce the finished product's oil content by approximately 11%–18%.
01
Feed Additive
Sodium carbonate, as a feed additive (functional group: acidity regulator), is recognized by the European EFSA as safe for all animal species, consumers, and users. In ruminant feed, it can be used as a buffer to help regulate rumen pH, mitigating the risk of acidosis from high-concentrate feeding. In the feed pelleting process, it also helps improve pellet lubrication and product hardness, facilitating free-feeding.
02
Glass Manufacturing
As a flux, it effectively lowers the melting point of silicates, improving the transparency and strength of finished products, accounting for approximately 50% of global sodium carbonate consumption.
03
Chemicals and Water Treatment
Used in the production of sodium silicate (water glass), baking soda, detergents, and other chemicals; in water treatment, it is used as a water softener (removing calcium and magnesium ions) and a neutralizer for acidic wastewater.
04
Metallurgy and Textiles
Used in ore processing, metal smelting fluxing, steelmaking desulfurization, and as a refining and fixing agent in textile printing and dyeing.
