
Gellan gum is a water-soluble anionic heteropolysaccharide produced by fermentation of Pseudomonas elodea. It has a CAS number of 71010-52-1 and appears as a white to light-yellow, odorless and tasteless powder.
Its chemical structure consists of a repeating tetrasaccharide unit composed of β-D-glucose, β-D-glucuronic acid, β-D-glucose, and α-L-rhamnose linked by glycosidic bonds. Some glucose units are partially substituted with acetyl and glycerate groups.

Gellan gum dissolves readily in cold water, forming a clear and homogeneous colloidal solution. Its most remarkable feature is its exceptionally high gelling efficiency-strong gels can be formed at very low concentrations of 0.05–0.25%, making it one of the most efficient natural polysaccharide gelling agents known.
