Pectin - A Versatile Natural Polysaccharide
Pectin is a naturally occurring acidic heteropolysaccharide. It is a linear macromolecule formed by D-galacturonic acid units linked via α-1,4-glycosidic bonds. Owing to its excellent gelling, thickening, and stabilizing properties, pectin is widely used across food, pharmaceutical, cosmetic, and industrial applications.
Appearance
White to light yellow powder; odorless or with a slight characteristic odor; smooth and slippery mouthfeel
Solubility
Soluble in water (1:20 forms a viscous colloidal solution); insoluble in ethanol and other organic solvents
Stability
Stable under acidic conditions (pH 2.5–4.0); readily degrades in alkaline environments; good heat resistance, suitable for food processing
Solution properties
Aqueous solutions are weakly acidic, highly viscous, and capable of forming thermoreversible gels
Main Application Areas
1.Food Industry (80–90% of the market)
Gelling agent
Jams and jellies (0.5–1.5%); high-methoxyl pectin forms gels under high-sugar, low-acid conditions
Thickener and stabilizer
Fruit juice beverages (0.1–0.5%) and yogurt (0.2–0.8%); prevents sedimentation and phase separation, improves mouthfeel
Low-sugar foods
Low-methoxyl pectin, combined with calcium ions, can gel under low-sugar conditions, meeting the demand for healthier diets
Baking
Extends shelf life, improves filling flow properties, and prevents overflow during baking
2.Pharmaceuticals and Health Products
Pharmaceutical excipient
Used as a tablet disintegrant and oral liquid thickener, enhancing drug stability and bioavailability
Dietary fiber
Promotes gut health, lowers cholesterol, and supports weight management; recommended daily intake: 5–10 g
Heavy metal adsorption
Used as an adjunct treatment for poisoning by heavy metals such as lead and mercury
3. Cosmetics and Personal Care
Skincare products:
Creams and face masks (0.5–3%); increases viscosity, improves skin feel, and helps retain moisture
Color cosmetics:
Foundations and lipsticks (0.3–1.0%); enhances stability and prevents separation and clumping
Hair care products:
Repairs the hair cuticle, improves smoothness, and reduces static electricity
4. Other Industrial Applications
Feed additives
Acts as a binder and stabilizer, improving pellet integrity and supporting animal gut health
Water treatment
Adsorbs heavy metal ions for use in industrial wastewater treatment
Textile industry
Used as a sizing additive to enhance yarn strength and abrasion resistance
